I generally plan 6 meals a week, since the 7th is often eaten out, or leftovers, or something quick like peanut butter.

Week of 3/29/2010

Due to sickness last week, we didn't get around to a couple of the planned recipes, so they are reappearing this week.

(1) *New Recipe* Curried tofu salad over mixed greens (I'm adapting this from a curried chicken salad recipe, but using baked tofu instead)

(2) Meatloaf Wellington (a recipe I plan to add to the site as soon as I perfect it) and roasted veggies

(3) Stirfry (made with frozen stirfry veggies, sauteed tofu, and stirfry sauce) served over brown rice with vegetable eggrolls

(4) *New recipe* Moussaka (which I will attempt to adapt from several online recipes, including healthy and vegan versions) ... wish me luck

(5) *New recipe* Pasta Primavera (made with lemon pepper fettuccini)

(6) Salmon burgers, steak fries, and sauteed spinach

(1) Spaghetti w/ Italian sausage and garlic bread

(2) Chicken & mushroom Zürcher Geschnetzeltes over spaetzle (using Morningstar Farms Chik Strips and a Knorr Fix envelope purchased at our local German Deli - you can also order from them online)

(3) Meatloaf Wellington and frozen veggies (a recipe I plan to add to the site as soon as I perfect it)

(4) Buffalo wings po'boys ( a lazy veg recipe, being made for the first time with gardein brand buffalo wings) and roasted veggies

(5) Egg, cheese, & sausage English muffin sandwiches and fruit salad

(1) Grilled mahi-mahi, mac&cheese, eggplant (never had this last week, so it has been bumped to this week)

(2) Pasta with Arugula (a Lazy Veg recipe, see sidebar)

(3) Morningstar Farms riblet sandwiches, french fries, sauteed spinach

(4) Chili (may use a new recipe, or the one in the sidebar) and cornbread

(5) Nachos made with leftover chili

(6) Quesadillas (another Lazy Veg recipe)

March Contest - VeggieMealMaker.com


VeggieMealMaker.com is a new vegetarian and vegan meal planning website. Every week, you get a fantastic meal plan with recipes, plus a shopping list and a price comparison for many major grocery stores.

I participated in beta testing for the site and really liked the recipes offered, which are generally easy and nutritious. Our favorite recipe was the Bowtie Asparagus Pasta. I made it with 4 oz of pasta (to serve 2) and reduced the soymilk/water a bit, but kept the spices and vegetables at the original recipe amounts (being the vegetable fan that I am). I loved the "creamy" sauce that was dairy-free. We will definitely make this one again.
