The Lazy Vegetarian

Recipe - Buffalo Wings Po'boys

Here's another *recipe* using convenience vegetarian foods.

Buffalo Wings Po'boys (subs, hoagies, heros, grinders) - serves 2

One package Gardenburger Buffalo Chik'n Wings (found at some grocery stores and health food stores)
*warning* do not try to substitute a different brand - these are the best
Two 6" Rolls (can use packaged, but bakery are much better)
Lettuce leaves (romaine or iceberg)
Tomatoes, sliced thin
Onion slices, preferably purple/red onions

Cook wings in microwave as directed. Toast rolls (or not, if you prefer). Assemble sandwiches per taste. I recommend generous amounts of lettuce and tomatoes because these wings are hot!

This goes great with a quick fruit salad or just some melon slices.

**Note: We made these a few days ago and put some ranch dressing on them - very tasty - blue cheese dressing would probably be great, too.

Mmmm... I'm not even a vegetarian, and that sounds good!

I love to make these. I slather on mayonnaise instead of ranch or bleu cheese because I feel it cuts the heat a little better.

I'm so glad to have found this website. It very literally describes me.

You can also put the same stuff into a quesadilla...mmmm...

A similar recipe that I eat (at least once a week): Morningstar chickn patties in the oven (buffalo or regular). Put a tortilla with cheese right on the rack the last 2 minutes of cooking. Put the chickns in the tortilla and add chopped lettuce (caeser or romaine) plus ranch dressing....mmmmm...mmmm...mmmmm.
