Recipe- Annie's Banana Bread
Another "not-so-lazy" recipe. Adapted from a BH&G recipe. Delicious for your family or as gifts.1.5 cups each whole wheat and unbleached white flour
2.5 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
Stir together above ingredients in a medium mixing bowl.
2 eggs, or equivalent egg substitute
2 cups mashed ripe bananas (approx 3 - 4 bananas)
1.5 cups sugar
1/4 cup canola oil
In a large mixing bowl, stir these ingredients until well-mixed. Stir in flour mixture just until moistened. Separate between two loaf pans (sprayed with non-stick spray). Bake in a 350 degree F oven for 45 - 50 min. (Time depends on loaf pan size and material.)
We often freeze the second loaf (wrap in aluminum foil) to enjoy later.

I never add in the white flour to recipes like these (I mill all my own) so if I can find a free afternoon (which is actually very unlikely) I'm going to try this recipe with all wholemeal. Haven't used cinnamon in banana bread before, so I'm eager to try it!
