Recipe - Fruit Stuffing

Well, I realize I left it a little late for this Thanksgiving, but, just file it away for next year!

Fruit Stuffing (adapted from an older cookbook - Lowfat Meals in Minutes)

1 cup chopped cranberries
2 Tbsp sugar (or equivalent other sweetener)
12 slices raisin bread, cut into cubes *
1 cup vegetable broth **
2 Tbsp melted margarine or butter
2 Tbsp orange juice
salt (1/8 tsp, or as desired)

Combine all ingredients in a large mixing bowl. Can be stuffed in your "turkey". Or cook at 325 degrees for 35 minutes in a covered casserole - taking off the cover for the last 10 minutes to brown.


* If you have access to a bakery outlet store - great - cause it's best to get this a tad stale.  I do not recommend "Cinnabon" raisin bread for this recipe.

** My store sells a 3 pack aseptic ("juice box") of vegetable broth - 8 oz each. These are great for recipes. Or, if desperate, you can use a vegetable bouillon cube. For those reading here who do eat meat products, you can substitute chicken broth.
