Recipe - Mushroom Pasta

(E, this is for you -- Annie)

My husband and I created this recipe after being served a similar dish at a restaurant (theirs probably had a better name - we aren't talented at naming recipes). It's a very simple, but tasty, dinner. Ours uses way less oil, but feel free to adjust to your taste.


1 large* package white (button) mushrooms - wiped clean (unless you can find pre-washed ones)
1/4 cup water
2 - 3 Tablespoons olive oil
3 - 4 cloves garlic, minced
2 cups penne pasta (whole grain, or part whole grain)
1/8 - 1/4 cup shredded Parmesan cheese**
Salt and fresh-ground pepper

Using a food processor***, slice the mushrooms very thin. Cook the pasta according to package. While pasta cooks, "sweat" mushrooms in a very large skillet with water for 4 - 5 minutes. ("Sweat" means high heat, no cover. It helps to pre-spray the skillet with a non-stick spray. Watch carefully to avoid burning mushrooms.) Heat oil in a small skillet and add garlic, stirring constantly for a few minutes. Add oil/garlic to mushrooms. Add cooked pasta. Stir in cheese. Add salt and pepper to taste.

Serve with a nice salad to round out the meal.


* I think it's 1 pound
** not the powdered cheese in the green can - get the good stuff
*** if you don't own one, how do you call yourself "lazy" --- oh, and you'll have to slice them by hand

Wow, I'm glad you came back. I just found this blog today! I'm not vegetarian myself, but I'm (also) a lazy cook and welcome meat-free recipes.

That recipe sounds really great, but I think I'll try modifying it a little to avoid using more than one skillet. I'll post here to let you all know how it turns out!

Sounds good! I make a very similar dish, only I add peppers. (Green, yellow, whatever's available.) If you like peppers they add great flavor from grilling in the skillet.

Syrra, you are correct. I forgot to mention that this dish does create a lot of dirty dishes (like that wonderful food processor, what a pain to clean). The trick is to get someone else to promise to clean up before you make this dish!

I like this recipe. these mushroom pasta are sure to taste great and are extremely nutritious as well. mushroom & pasta combination are likely to be tasty and healthy alike. I am going to make it for the holidays when my kids will be at home. I'll be sure that what they are eating is healthy.

This sounds like an amazing recipe! I am a vegetarian, but I'm sad to say I'm not a lazy one :(
I always find that adding something unexpected really makes a recipe amazing. I think I might add some parsley or oregano to this.
