Monday: Tofu curry salad ( a baked tofu version of a chicken salad using Greek yogurt - quite yummy) on a bed of mixed greensTuesday: Blueberry pancakes, eggs, and fruit
Wednesday: Spaghetti with (vegetarian) Italian sausage
Thursday: Enchiladas made with Morningstar Farms chik'n strips, spinach, and cheese (recipe coming)
Friday: leftovers
Saturday: frozen pizza (after a busy day at the Ft Worth rodeo and stock show)
Sunday: Morningstar Farms riblets and mashed sweet potatoes
